Baked Feta Eggs is a Mediterranean-style baked dish with roasted tomatoes, feta cheese, spinach, and eggs baked until perfectly set and creamy.

Ingredients

  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • ½ small red onion, diced
  • 3 cloves garlic, minced
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 1 cup chopped baby spinach
  • 4 large eggs
  • Optional: fresh basil or chives for topping

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Add tomatoes, bell pepper, onion, garlic, and feta to baking dish(es).
  3. Drizzle with olive oil.
  4. Mix oregano, salt, thyme, black pepper, and red pepper flakes.
  5. Sprinkle seasoning evenly over vegetables and feta.
  6. Bake for 25 minutes.
  7. Remove and stir mixture to combine melted feta with vegetables.
  8. Add spinach and mix until wilted.
  9. Create wells and crack eggs into them.
  10. Bake another 10 minutes until eggs are set.
  11. Top with fresh herbs and serve warm.

Notes

  • Use a single baking dish for a shared brunch version.
  • For runny yolks, reduce final bake time slightly.
  • Best served with crusty bread or pita.
