Bang Bang Fried Rice is a spicy, creamy, and flavor-packed chicken fried rice tossed in a signature bang bang sauce made with sweet chili, mayo, and Sriracha.

Ingredients

  • 1 1/2 cups cooked rice (preferably day-old)
  • 1 chicken breast, diced
  • 2 eggs, beaten
  • 1/2 cup diced carrots
  • 1/3 cup green peas
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 2–3 tablespoons soy sauce
  • 1 tablespoon oil
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha
  • 1 teaspoon rice vinegar

Instructions

  1. Mix mayonnaise, sweet chili sauce, Sriracha, and rice vinegar in a bowl. Set aside.
  2. Heat oil in a skillet or wok over medium-high heat. Cook chicken 5–6 minutes until done. Remove.
  3. Scramble eggs in the same pan. Remove and set aside.
  4. Sauté carrots and garlic for 2–3 minutes, then add peas and cook 1 minute.
  5. Add rice and stir-fry 3–4 minutes until heated and slightly crispy.
  6. Return chicken and eggs to pan. Add soy sauce and mix well.
  7. Pour bang bang sauce over rice and stir until coated.
  8. Garnish with green onions and serve hot.

Notes

  • Use day-old rice for best texture.
  • Adjust Sriracha for spice level.
  • Add shrimp instead of chicken for variation.
