Topped with creamy sausage gravy, fluffy scrambled eggs, cheddar cheese, and crispy fried onions. This breakfast pizza is a showstopper for weekend brunch or holiday mornings!

Ingredients

  • 1 package (16 oz) breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 cups milk, divided
  • Ground black pepper, to taste
  • 1 tbsp olive oil (optional)
  • 1 pre-baked pizza crust (12-inch)
  • Cooking spray
  • 6 large eggs
  • 1/4 cup milk (for eggs)
  • 1 cup shredded Cheddar cheese (or more, as desired)
  • Crispy fried onions for topping

Instructions

  1. Prepare the Sausage Gravy: In a large skillet over medium heat, cook the sausage, breaking it up with a spatula until it’s fully browned (about 5-7 minutes). Drain any excess grease if necessary.
  2. Sprinkle the flour over the cooked sausage, stirring to coat evenly.
  3. Gradually add 2 cups of milk, stirring constantly until the gravy thickens, about 10 minutes. Season with black pepper to taste, then set aside.
  4. Set up the Pizza Base: Preheat your oven to 400°F (200°C).
  5. Place the pre-baked pizza crust on a baking sheet. If desired, brush the surface with a bit of olive oil for added flavor.
  6. Spread half of the sausage gravy evenly over the pizza crust.
  7. Cook the Eggs: In a medium bowl, whisk together the eggs and 1/4 cup of milk.
  8. Spray a large skillet with cooking spray and heat over medium-high. Pour in the egg mixture.
  9. Cook the eggs, stirring gently, until they’re just set but still soft (about 5 minutes).
  10. Assemble the Pizza: Spread the scrambled eggs evenly over the gravy-covered crust.
  11. Top generously with shredded Cheddar cheese.
  12. Bake the Pizza: Place the pizza in the preheated oven and bake for 10-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
  13. Serve: Sprinkle crispy fried onions on top for added crunch. Slice and serve warm!

Notes

  • Use leftover sausage gravy from biscuits and gravy for an even quicker assembly.
  • For a homemade crust, use refrigerated pizza dough or crescent roll dough.
  • Add diced bell peppers, mushrooms, or onions to the scrambled eggs for extra veggies.
  • For a spicier version, use hot breakfast sausage and add red pepper flakes.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or air fryer.
  • Serve with hot sauce or additional gravy on the side.
