Cinnamon Sugar French Toast Roll-Ups – crispy on the outside, soft and sweet on the inside! These fun, portable French toast roll-ups are stuffed with buttery cinnamon sugar, dipped in custard, and pan-fried to golden perfection. Ready in just 15 minutes for a breakfast the whole family will love!

Ingredients

  • 6 slices of bread (white or brioche work best)
  • 2 large eggs
  • 1/4 cup (60ml) milk
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons (28g) unsalted butter, melted

Instructions

  1. Prepare the Cinnamon Sugar Mixture: In a small bowl, combine the granulated sugar and ground cinnamon. Mix well until evenly combined.
  2. Prepare the Egg Mixture: In a shallow dish, whisk together the eggs, milk, and vanilla extract until smooth. Ensure all ingredients are well combined.
  3. Assemble the Roll-Ups: Flatten each slice of bread. Spread butter, sprinkle cinnamon-sugar. Roll tightly.
  4. Cook the Roll-Ups: Dip in egg mixture. Cook on all sides until golden brown, about 2-3 minutes per side.
  5. Serve: Remove toothpicks, if used. Serve immediately.

Notes

  • Use fresh, soft bread that bends easily without cracking – white bread or brioche works best.
  • Flatten bread slices with a rolling pin to make rolling easier and more secure.
  • Use toothpicks to hold roll-ups together while cooking, then remove before serving.
  • For a cream cheese filling, add 2 oz softened cream cheese mixed with 1 tbsp sugar before rolling.
  • For a Nutella version, spread chocolate hazelnut spread inside instead of cinnamon sugar.
  • Serve with maple syrup, chocolate sauce, or fresh berries for dipping.
  • Keep cooked roll-ups warm in a 200°F oven while finishing remaining batches.
  • For an air fryer version: cook at 370°F for 5-7 minutes, shaking halfway through.
