Creamy Rotisserie Chicken Broccoli Pasta is a rich and comforting one-pan meal featuring tender chicken, broccoli, and penne tossed in a creamy Parmesan garlic sauce.

Ingredients

  • 1 lb penne pasta
  • 1 whole rotisserie chicken, shredded (about 4 cups)
  • 4 cups broccoli florets
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup Parmesan cheese
  • 1/2 cup mozzarella cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Boil pasta in salted water according to package instructions.
  2. Add broccoli during the last 3 minutes of cooking.
  3. Reserve 1 cup pasta water, then drain pasta and broccoli.
  4. Heat olive oil and butter in a large skillet.
  5. Sauté onion 4–5 minutes until soft, then add garlic for 30 seconds.
  6. Add cream and chicken broth and simmer gently 2–3 minutes.
  7. Remove from heat and whisk in Parmesan and mozzarella until smooth.
  8. Season with Italian seasoning, garlic powder, salt, pepper, and red pepper flakes.
  9. Add pasta, broccoli, and shredded chicken. Toss to coat.
  10. Use reserved pasta water if needed to loosen sauce.
  11. Serve warm and creamy.

Notes

  • Rotisserie chicken saves time and adds flavor.
  • Add extra Parmesan for a thicker sauce.
  • Use whole milk for a lighter version.
