Humpty Dumpty Dip – a warm, cheesy, egg-cellent baked dip that’s perfect for breakfast, brunch, or game day! Loaded with chopped hard-boiled eggs, sharp cheddar, bacon, and a creamy, spiced mayo base. Serve with crackers, chips, or toasted bread for a crowd-pleasing appetizer!

Ingredients

  • 8 large eggs
  • 1 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 teaspoon hot sauce (optional, adjust to taste)
  • 1 teaspoon paprika (plus extra for garnish)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 cup shredded sharp cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 green onions, finely chopped
  • Crackers, chips, or toasted bread slices, for serving

Instructions

  1. Cook the Eggs: Place eggs in a saucepan, cover with cold water, and bring to a boil. Once boiling, turn off the heat, cover, and let sit for 10–12 minutes. Drain, cool under cold water, peel, and chop the eggs.
  2. Mix the Base: In a medium mixing bowl, combine mayonnaise, Dijon mustard, hot sauce, paprika, garlic powder, onion powder, salt, and black pepper. Stir in chopped eggs until well coated.
  3. Add Cheese & Bacon: Mix in shredded cheddar cheese and half of the crumbled bacon.
  4. Bake: Preheat oven to 350°F (175°C). Spread mixture evenly into a greased baking dish. Bake uncovered for 15–20 minutes, until hot and bubbly.
  5. Garnish & Serve: Sprinkle with the remaining bacon, chopped green onions, and a pinch of paprika. Serve warm with crackers, chips, or toasted bread.

Notes

  • Do not overcook the eggs – the 10-12 minute resting time after boiling creates perfectly hard-boiled eggs without green rings.
  • Add 1/4 cup of finely chopped pickles or relish for a tangy Deviled Egg version.
  • For a spicier dip, add extra hot sauce or a pinch of cayenne pepper.
  • Substitute cooked breakfast sausage or ham for the bacon.
  • Serve with celery sticks, bell pepper strips, cucumber rounds, or carrot sticks for a low-carb option.
  • This dip can be assembled ahead and refrigerated overnight – just add bacon garnish before baking.
  • Leftovers can be refrigerated for up to 4 days and reheated in the oven or microwave.
