Ingredients
6 6-inch tortillas
1 pound ground beef
½ cup onion, chopped
1–2 tablespoons taco seasoning (to taste)
¼ cup salsa
Salt and pepper, to taste
½ cup shredded cheddar cheese (or more to taste)
Olive oil spray or brush (for tortillas)
For serving: salsa, pico de gallo, sour cream
Instructions
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
In a skillet, cook ground beef and chopped onion until browned. Season with salt and pepper.
Drain excess fat, then stir in taco seasoning and salsa. Mix well and adjust seasoning.
Lightly brush or spray both sides of tortillas with olive oil and place them on the baking sheet.
Fill each tortilla with about ¼ cup of beef mixture and 1 tablespoon of cheese, then fold in half.
Bake for 10 minutes, then flip and bake another 5–10 minutes until crispy.
Optional: Add extra cheese during the last 5 minutes of baking for a melty topping.
Serve hot with salsa, pico de gallo, or sour cream.
Notes
You can use chicken, turkey, or beans instead of beef.
Don’t overfill tortillas or they may open while baking.
