Ingredients
2 lbs boneless skinless chicken breasts or thighs
1 cup pineapple juice
1 can (8 oz) pineapple chunks, drained
½ cup soy sauce
½ cup brown sugar
3 cloves garlic, minced
1 tablespoon cornstarch + 2 tablespoons water
1 red bell pepper, thinly sliced
½ teaspoon ground ginger
Salt & pepper to taste
Cooked rice for serving
Green onions & sesame seeds for garnish
Instructions
Place seasoned chicken in the slow cooker.
Whisk pineapple juice, soy sauce, brown sugar, garlic, and ginger.
Pour mixture over chicken.
Add pineapple chunks and bell pepper.
Cover and cook on low 5–6 hours (or high 3–4 hours) until tender.
Remove chicken from slow cooker.
Mix cornstarch with water and stir into sauce.
Cook sauce for 15 minutes until thickened.
Return chicken, coat in sauce, and cook 5 more minutes.
Serve over rice and garnish with green onions and sesame seeds.
Notes
Chicken thighs give extra juiciness.
For thicker sauce, add a bit more cornstarch slurry.
