Ingredients
1 1/2 cups cooked rice (preferably day-old)
1 chicken breast, diced
2 eggs, beaten
1/2 cup diced carrots
1/3 cup green peas
2 cloves garlic, minced
2 green onions, sliced (for garnish)
2–3 tablespoons soy sauce
1 tablespoon oil (plus more as needed)
1/4 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon Sriracha (adjust to taste)
1 teaspoon rice vinegar
Instructions
Mix mayonnaise, sweet chili sauce, Sriracha, and rice vinegar in a bowl to make the bang bang sauce. Set aside.
Heat oil in a large skillet or wok over medium-high heat. Cook diced chicken with salt and pepper until browned and cooked through. Remove and set aside.
Scramble eggs in the same pan until just set, then remove and set aside.
Add a little more oil, sauté carrots and garlic for 2–3 minutes. Add peas and cook 1 more minute.
Add cold rice and stir-fry on high heat for 3–4 minutes, breaking up clumps.
Return chicken and eggs to the pan and mix well.
Pour in soy sauce and stir evenly.
Add bang bang sauce and toss until everything is coated and heated through.
