This creamy smothered chicken and rice is the ultimate comfort food with juicy seasoned chicken breasts served over fluffy rice in a rich cheesy cream sauce.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 tsp salt
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup chicken broth
  • 1/2 tsp garlic powder
  • 1/4 tsp thyme
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped

Instructions

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat olive oil in skillet and sear chicken 4–5 minutes per side until golden. Remove.
  3. Cook rice with chicken broth and salt until tender, about 15–18 minutes.
  4. In same skillet melt butter, whisk in flour, and cook 1–2 minutes.
  5. Slowly whisk in milk and broth until smooth.
  6. Add garlic powder, thyme, cheddar, and Parmesan. Cook until thickened.
  7. Return chicken to skillet and spoon sauce over top.
  8. Cover and simmer 10 minutes until chicken is fully cooked.
  9. Serve chicken and sauce over rice.
  10. Garnish with parsley and serve warm.

Notes

  • Pound chicken breasts evenly for faster cooking.
  • Add mushrooms or spinach to the sauce if desired.
  • Great with mashed potatoes instead of rice.
